  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 packet of taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Shredded cheddar cheese, for garnish
  • Chopped fresh cilantro, for garnish


  1. In a large pot, brown the ground beef over medium heat. Drain any excess grease.

  2. Add the diced onion and minced garlic to the pot and cook until onion is translucent.

  3. Stir in the taco seasoning and cook for another minute.

  4. Add the black beans, corn, diced tomatoes, diced tomatoes with green chilies, chicken broth, and heavy cream to the pot. Stir well to combine.

  5. Bring the soup to a simmer and let it cook for about 15 minutes, stirring occasionally.

  6. Season with salt and pepper to taste.

  7. Serve hot, garnished with shredded cheddar cheese and chopped fresh cilantro.
