Creamy Dilled Parsnip and Leek Soup Recipe

A hot, creamy soup with the sweetness of parsnips and leeks, the tang of buttermilk, and the savory taste of dill and nutmeg.

How To Make Creamy Dilled Parsnip and Leek Soup

A scrumptious soup recipe that is perfect for cold weather.

  • 2 lb parsnips (peeled and diced)
  • 2 leeks (thinly sliced (white and light green parts))
  • 2 cups buttermilk
  • 3 tbsp butter
  • 1½ qt chicken stock
  • 2 tsp salt
  • ½ tsp white pepper
  • ½ tsp nutmeg
  • 3 tbsp fresh dill (finely chopped )
  • ½ cup sour cream (for garnish)
  • dill sprigs (for garnish)
  1. Melt butter in a stockpot or dutch oven.
  2. Add parsnips and leeks, and sauté for 4 minutes, or until vegetables soften slightly.
  3. Add chicken stock, salt, pepper, and nutmeg.
  4. Simmer until vegetables are very soft, about 45 minutes.
  5. Add buttermilk and dill, and simmer for 15 minutes longer.
  6. Spoon into serving bowls.
  7. Add a dollop of sour cream and a sprig of dill to each bowl.
  8. Stir sour cream into the soup to eat.
