  • 1 lb fresh asparagus, trimmed and cut into 1-inch pieces
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Freshly chopped parsley for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.

  2. Add the asparagus pieces to the pot and cook for about 5 minutes, until slightly tender.

  3. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for about 10-15 minutes, until the asparagus is fully cooked and tender.

  4. Use an immersion blender or transfer the soup to a blender, and puree until smooth.

  5. Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.

  6. Simmer the soup for another 5 minutes to heat through.

  7. Serve hot, garnished with freshly chopped parsley.
