Ingredients
- 1 whole chicken breast, boneless
- season salt
- 1 cup carrots
- ½ cup celery
- ½ cup onion
- 1 bay leaf
- 12 cup water, divided
- 2 tsp. salt
- 1 tsp. pepper
- 16 oz. Acini Di Pepe pasta
Instructions
- Rinse chicken breast and sprinkle with season salt.
- Place chicken, carrots, celery, onion, bay leaf and 8 cups of water in a large pot.
- Cook, covered on medium high heat for 45 minutes.
- Take pot off heat.
- Remove chicken and cut into small pieces.
- Return chicken to pot.
- Return to heat.
- Add 4 cups water , salt and pepper.
- Bring pot back to boil and add Acini Di Pepe.
- Cover pot and cook about 20 minutes longer or until Acini Di Pepe is tender.
- Remove bay leaf and enjoy!
