This chicken barley soup is sure to keep you warm with the flavors of tomatoes, celery, and pearl barley boiled in stock, then topped with fresh herbs.

Ingredients
- 1tbspolive oil
- 1largeonion
- 1clovegarlic,minced
- 8cupslow sodium chicken broth,or homemade
- 1½cupscarrots,chopped
- 3stalkscelery,chopped
- 14.5ozlow sodium diced tomatoes,canned, lightly drained
- ¾cuppearl barley
- 2½cupschicken,cooked
- 2bay leaves
- 1tsppoultry seasoning
- ½tspdried thyme
For Optional Herbs:
- 3tbspfresh dill
- 3tbspfresh parsley
Instructions

Heat olive oil over medium heat in a large pot. Add onion and garlic and cook until slightly softened. Add remaining ingredients except for fresh herbs.

Bring to a boil and let simmer uncovered for 1 hour or until barley is tender.

Discard bay leaves and stir in fresh herbs.
