How To Make Chicken and Rice Soup

  • 2tbspbutter
  • ½cuponionfinely diced
  • ¾cupcarrotspeeled, halved lengthwise, and sliced
  • ¾cupcelerysliced
  • tspgarlicminced
  • cupscooked chickenshredded
  • 1tspItalian Seasoning
  • Salt and pepperto taste
  • 6cupschicken broth
  • 2cupscooked ricecan be white, brown or wild rice
  • 2tbspparsleychopped


  1. Melt the butter in a large pot over medium heat.

  2. Add the onion, carrots and celery to the pot and cook for 4 to 5 minutes or until softened.

  3. Add the garlic to the pot and cook for 30 seconds.

  4. Add the chicken, Italian seasoning, salt, pepper and chicken broth, then bring to a simmer.

  5. Cook for 10 to 15 minutes or until vegetables are tender.

  6. Stir in the rice.

  7. Cook for 5 minutes.

  8. Sprinkle with parsley, serve, and enjoy!
