How To Make Chicken and Avocado Soup

Add a touch of Latin American flavor by making this avocado soup mixed with chicken with a prickly slightly sour taste from lime and tomatoes. Serve it warm.

  • 2tspolive oil
  • cupsscallions,chopped fine
  • 2clovesgarlic,minced
  • 1medium tomato,diced
  • 5cupsreduced sodium chicken broth
  • 2cupschicken breast,shredded
  • 8ozripe hass avocados,diced
  • cupcilantro,chopped
  • 4lime wedges
  • kosher salt and fresh pepper,to taste
  • tspcumin
  • pinchchipotle chile powder,optional


  1. Heat a large pot over medium heat.

  2. Add the oil, 1 cup of scallions and garlic. Sauté about 2 to 3 minutes until soft then add the tomatoes and sauté another minute, until soft.

  3. Add chicken stock, cumin and chile powder and bring to a boil. Simmer, covered on low for about 15 minutes.

  4. In four bowls, fill each with ½ cup of chicken, ½ avocado, the remainder of the scallions, and cilantro.

  5. Ladle 1 cup of chicken broth over the chicken and serve with a lime wedge.
