- 8 ounces shiitake mushrooms, sliced
- 1/2 cup bamboo shoots, thinly sliced
- 1/4 cup rice vinegar
- 3 tablespoons soy sauce
- 2 tablespoons cornstarch
- 1 tablespoon chili garlic sauce
- 1 tablespoon sesame oil
- 1 teaspoon ground white pepper
- 1/2 teaspoon sugar
- 2 eggs, beaten
- 8 ounces tofu, diced
- 2 green onions, thinly sliced
- Fresh cilantro, for garnish
- Lime wedges, for serving

In a large pot, bring the chicken broth to a simmer over medium heat. Add the shiitake mushrooms and bamboo shoots. Cook for 5 minutes.

In a small bowl, whisk together the rice vinegar, soy sauce, cornstarch, chili garlic sauce, sesame oil, white pepper, and sugar until well combined.
