  • 4 large ripe tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 small red onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of red wine vinegar
  • 2 tablespoons of extra-virgin olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of cayenne pepper (optional)
  • 1/4 cup of fresh basil leaves, chopped
  • 1/4 cup of fresh parsley leaves, chopped
  • 2 cups of tomato juice
  • 1/4 cup of croutons (for garnish, optional)

Instructions

  1. In a large mixing bowl, combine the tomatoes, cucumber, bell pepper, red onion, garlic, red wine vinegar, olive oil, salt, black pepper, and cayenne pepper (if using). Mix well.

  2. Using an immersion blender or a regular blender, blend half of the mixture until smooth. Return it to the bowl with the remaining chunky mixture.

  3. Stir in the fresh basil, parsley, and tomato juice. Mix well. Taste and adjust the seasoning if needed.

  4. Cover the bowl and refrigerate for at least 2 hours, or until chilled.

  5. Serve the gazpacho cold, garnished with croutons if desired.
