  • 3 cloves of garlic, minced
  • 1 bunch of kale, trimmed and chopped
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 1 cup vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 5 minutes.

  2. Add minced garlic and cook for another minute until fragrant.

  3. Add chopped kale and sauté until wilted, about 5 minutes.

  4. Stir in cannellini beans, vegetable broth, dried oregano, and dried thyme. Season with salt and pepper.

  5. Cover and simmer for 10 minutes until flavors have melded together.

  6. Serve hot and enjoy!
