
How To Make Cheesy Chicken Parmesan Soup
This easy recipe turns your favorite pasta dish into a soup. Tomatoes, chicken broth, and 2 kinds of cheese are mixed for a tasty chicken parmesan soup.

- 1tbspextra virgin olive oil
- 3tspgarlic,minced
- 3tbsptomato paste
- 1tspred pepper flakes,crushed
- 1tspItalian seasoning
- 1tspbasil
- 15ozdiced tomatoes
- 6cupschicken broth
- 1lbchicken breasts,boneless skinless, cut into 1-inch chunks
- 8ozpenne
- 1½cupparmesan,shredded
- 1cupmozzarella,shredded
- salt and pepper,to taste
- fresh parsley,for garnish
Instructions

Warm oil in a large pot over medium heat. Add garlic and cook until fragrant. Stir in tomato paste, crushed red pepper flakes, Italian seasoning, and basil.

Add diced tomatoes and chicken broth, bring to a simmer. Add chicken and cook for 10 to 12 minutes until cooked through.

Add dry pasta and cook for about 10 minutes until al dente.

Just before serving, mix in both kinds of cheese until just melted. Season with salt and pepper. Top with parsley for effect.
