  • 1 cup onion, chopped
  • 2 tbsp butter
  • 10 3/4 oz cream of mushroom soup
  • 1 can milk
  • 3 cup Velveeta cheese, cubed
  • 5 cup chicken broth
  • 20 oz broccoli, thawed,frozen chopped
  • 2 cup rice, cooked

For Garnish:

  • cheese, shredded
  • green onion, sliced
  • sour cream


  1. Melt butter in a heavy saucepot.

  2. Saute onions until clear. Add mushroom soup, milk and cheese.

  3. Cook until well incorporated. Then add broth, broccoli and rice.

  4. Cover and let simmer for around 30 minutes.

  5. Garnish with shredded cheese, green onions, and sour cream.
