Ingredients

  • 1 lb carrots, peeled and chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tbsp fresh ginger, grated
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • ¼ cup heavy cream (optional)
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, garlic, and ginger. Cook until onions are translucent.

  2. Add chopped carrots to the pot and cook for 5 minutes, stirring occasionally.

  3. Pour vegetable broth into the pot. Season with cumin, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until carrots are tender.

  4. Use an immersion blender or transfer the soup to a blender to puree until smooth.

  5. Return the soup to the pot. Stir in heavy cream (if using). Heat the soup over low heat until warmed through.

  6. Serve the carrot and ginger soup hot, garnished with fresh parsley.
