This soup is great for those cold winter/rainy days or those chilly days in fall. It’s a warm, comforting soup that is super easy to cook up.
How To Make Cabbage Soup
- 1 lb beef (ground )
- 2 onions (large, chopped)
- 2 garlic cloves (minced)
- 1/2 cup celery (diced)
- 1 green pepper (chopped)
- 2 tbsp oil
- 28 oz tomatoes (or 2 lb. frozen)
- 10 oz tomato paste
- 2 cups raw potatoes (diced)
- 2 cups carrots (diced )
- 4 cups beef stock
- Salt and pepper (to taste)
- 7 leaves cabbage (coarsely chopped )
Saute beef, onions, garlic, celery and green pepper in oil.
Add remaining ingredients except for the cabbage. Simmer uncovered for 1 hour.
Add cabbage and simmer for 1 more hour, adding more water if necessary (up to 3 cups). Serve warm.
