This soup is great for those cold winter/rainy days or those chilly days in fall. It’s a warm, comforting soup that is super easy to cook up.
Cabbage Soup Recipe
- 1 lb beef ground
- 2 onions large, chopped
- 2 garlic cloves minced
- 1/2 cup celery diced
- 1 green pepper chopped
- 2 tbsp oil
- 28 oz tomatoes or 2 lb. frozen
- 10 oz tomato paste
- 2 cups raw potatoes diced
- 2 cups carrots diced
- 4 cups beef stock
- Salt and pepper to taste
- 7 leaves cabbage coarsely chopped
Saute beef, onions, garlic, celery and green pepper in oil.
Add remaining ingredients except for the cabbage. Simmer uncovered for 1 hour.
Add cabbage and simmer for 1 more hour, adding more water if necessary (up to 3 cups). Serve warm.
