Cabbage Soup Recipe

Ingredients

  • 1 lb beef ground
  • 2 onions large, chopped
  • 2 garlic cloves minced
  • 1/2 cup celery diced
  • 1 green pepper chopped
  • 2 tbsp oil
  • 28 oz tomatoes or 2 lb. frozen
  • 10 oz tomato paste
  • 2 cups raw potatoes diced
  • 2 cups carrots diced
  • 4 cups beef stock
  • Salt and pepper to taste
  • 7 leaves cabbage coarsely chopped

Instructions

  1. Saute beef, onions, garlic, celery and green pepper in oil.

  2. Add remaining ingredients except for the cabbage. Simmer uncovered for 1 hour.

  3. Add cabbage and simmer for 1 more hour, adding more water if necessary (up to 3 cups). Serve warm.
