How To Make Cabbage Roll Soup

Turn your usual cabbage roll into a hearty and comforting soup with this recipe. It’s also filled with rice, ground beef, and loads of tomato sauce.

  • 2tspolive oil
  • salt and pepper,to taste
  • 1lbground beef
  • 1onion,finely diced
  • 2tspgarlic,minced
  • 4cupsgreen cabbage,coarsely chopped
  • 2carrots,peeled, quartered and sliced
  • 4cupsbeef broth
  • 24oztomato sauce
  • ½cuplong grain rice,uncooked
  • 1bay leaf
  • 3tbspbrown sugar
  • 2tbspparsley


  1. Heat the olive oil in a large pot over medium high heat. Add the ground beef and season with salt and pepper to taste.

  2. Cook, breaking up the meat with a spatula, for about 4 to 5 minutes or until beef is browned. Add the onion and garlic cook for 2 to 3 minutes.

  3. Add the cabbage, carrots, beef broth, tomato sauce, rice, bay leaf and brown sugar to the pot. Season with salt and pepper to taste.

  4. Bring to a simmer and cook for 25 minutes or until rice is tender. Remove bay leaf and discard.

  5. Sprinkle with parsley and serve.
