Ingredients

  • 1 ½ cup cucumbers, pared, seeded, and thinly sliced
  • 2 tbsp olive oil
  • 1 tsp salt

  • 2 tbsp dill, chopped
  • 1 cup walnuts, chopped
  • 1 ½ cup yogurt , or sour cream

Instructions

  1. In a bowl, mix together the oil, salt, pepper, garlic, dill, and walnuts.

  2. Place the cucumber slices in the mixture and marinate for 2 to 6 hours.

  3. Then, dump the mixture in a blender and puree until smooth.

  4. Mix in the cream when ready to serve.

  5. Put 1 to 2 ice cubes in each bowl and ladle the soup.
