
How To Make Beef, Potato and Quinoa Soup

Ingredients
- 2tspolive oil
- 6-7scallions,chopped
- 2garlic cloves,minced
- 1tomato,diced
- 1tspcumin
- ½tsphomemade sazon
- ½lbbeef,cubed into small bite size pieces
- 5cupswater
- Beef bullion
- 1carrot,peeled and sliced
- 2tbspyellow bell pepper,diced
- 2mediumpotatoes,peeled and cubed
- 1cupquinoa,cooked
- 6tbspcilantro,fresh chopped
- Salt and pepper,to taste
Instructions

Saute oil in a large pot. Add scallions and garlic and sauté for 3 minutes until soft over medium heat.

Add tomato, cumin, sazon with achiote, ¼ cup cilantro, and cook for another 2 minutes.

Add beef, water, bullion, carrot, bell pepper, salt and bring to a boil.

Cover and simmer on low for about 1½ hours, until meat is tender.

Add potato and cooked quinoa; cook for about 25 minutes.

Add remaining chopped cilantro and serve.

If using a pressure cooker, cook soup with meat for 45 minutes. Add potato and quinoa, and cook for 10 minutes more.
