Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 2 cans (15 ounces each) of cannellini beans, drained and rinsed
- 2 cups chopped kale
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrots, and celery. Cook until the vegetables are soft, about 5 minutes.

Add the vegetable broth, cannellini beans, kale, thyme, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.

Remove from heat and let cool slightly. Use an immersion blender to blend about half of the soup, leaving some chunks for texture.
