Ingredients

  • 2 cans of pinto beans, drained and rinsed
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 jalapeno pepper, seeds removed and diced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • Salt to taste
  • 2 tbsp olive oil
  • 1/4 cup vegetable broth

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion, minced garlic, and diced jalapeno pepper. Cook until onions are translucent and fragrant.

  2. Add drained and rinsed pinto beans to the skillet. Use a potato masher or fork to mash the beans to your desired consistency.

  3. Stir in cumin, paprika, chili powder, and salt to taste. Cook for another 5 minutes, stirring occasionally.

  4. Gradually add vegetable broth, stirring until the beans reach a smooth and creamy texture. Cook for additional 5 minutes, or until heated through.

  5. Serve hot as a side dish or filling for burritos and tacos.
