How To Make Marrow Curry

Serves:

Ingredients

  • 500g marrow, peeled and cut into cubes
  • 2 tbsp oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • 1 cup coconut milk
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add onion. Saute until golden brown.

  2. Add garlic and ginger. Cook for a minute.

  3. Add cumin, coriander, turmeric, and red chili powder. Stir well.

  4. Add marrow cubes and season with salt. Cook for 5 minutes.

  5. Pour coconut milk and simmer for 10-15 minutes or until the marrow is tender.

  6. Garnish with fresh coriander leaves.

  7. Serve hot with rice or bread.
