Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 can black beans, rinsed and drained
  • 1 can coconut milk
  • 2 tbsp jerk seasoning
  • 1 tsp turmeric
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat vegetable oil over medium heat. Add onion, garlic, and red bell pepper. Cook until softened.

  2. Add sweet potatoes and cook for another 5 minutes.

  3. Add black beans, coconut milk, jerk seasoning, turmeric, cumin, salt, and pepper. Stir well to combine.

  4. Bring the curry to a simmer, then reduce the heat and cover the pot. Cook for about 25-30 minutes, or until the sweet potatoes are tender.

  5. Serve hot, garnished with fresh cilantro. Enjoy with rice or naan bread.
