How To Make Lemon & Coriander Couscous

Serves:

Ingredients

  • 1 cup couscous
  • 1 cup vegetable broth
  • 2 tbsp lemon juice
  • Zest of 1 lemon
  • 1/4 cup chopped fresh coriander
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. In a saucepan, bring the vegetable broth to a boil.

  2. Place the couscous in a heatproof bowl and pour the hot vegetable broth over it. Cover the bowl with a lid or plastic wrap and let it sit for 5 minutes.

  3. Fluff the couscous with a fork to separate the grains.

  4. In a small bowl, whisk together the lemon juice, lemon zest, olive oil, salt, and black pepper.

  5. Pour the lemon dressing over the couscous and mix well.

  6. Add the chopped coriander and toss to combine.

  7. Serve the Lemon & Coriander Couscous as a side dish or as a base for grilled vegetables or protein.
