How To Make Gnocchi with Courgette, Mascarpone & Spring Onions

Ingredients

  • 500g gnocchi
  • 2 courgettes, sliced
  • 2 spring onions, chopped
  • 200g mascarpone
  • 1 garlic clove, minced
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Cook the gnocchi according to package instructions. Drain and set aside.

  2. In a large pan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.

  3. Add the sliced courgettes to the pan and cook until tender, about 5 minutes.

  4. Stir in the chopped spring onions and cook for an additional 2 minutes.

  5. Reduce the heat to low and add the cooked gnocchi to the pan. Mix well.

  6. Add the mascarpone and gently stir until it melts and forms a creamy sauce.

  7. Season with salt and pepper to taste.

  8. Serve the gnocchi with a sprinkle of grated Parmesan cheese on top.
