Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.

  2. Add the onion and garlic and sauté until fragrant, about 2 minutes.

  3. Add the zucchini, yellow squash, and red bell pepper. Cook for 5 minutes, or until slightly softened.

  4. Stir in the cherry tomatoes, vegetable broth, dried basil, and dried oregano. Season with salt and pepper.

  5. Cover the skillet and simmer for 15 minutes, or until the vegetables are tender.

  6. Serve the vegetable ragout hot, garnished with fresh basil leaves.
