How To Make Vegetarian Quesadillas

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients

  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 1 cup canned black beans, rinsed and drained
  • 1 cup frozen corn, thawed
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • Salt, to taste
  • Optional toppings: salsa, guacamole, sour cream

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced peppers and onions and cook until softened, about 5 minutes.

  2. Add black beans, corn, chili powder, cumin, and salt to the skillet. Stir well to combine and cook for an additional 2 minutes.

  3. Remove vegetable mixture from the skillet and set aside. Wipe out the skillet.

  4. Place one tortilla in the skillet and sprinkle with a quarter of the shredded cheese. Spoon a quarter of the vegetable mixture onto one half of the tortilla.

  5. Fold the tortilla in half, pressing down gently with a spatula to seal. Cook for 2-3 minutes on each side, until crispy and golden brown.

  6. Repeat steps 4-5 with the remaining tortillas and filling.

  7. Cut quesadillas into wedges and serve hot with your desired toppings.
