Ingredients

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/4 cup mayonnaise
  • 2 tablespoons chopped red onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 8 slices of bread
  • Lettuce and tomato slices for serving

Instructions

  1. In a medium bowl, mash the chickpeas with a fork or potato masher until desired consistency is reached.

  2. Add mayonnaise, red onion, parsley, lemon juice, cumin, salt, and pepper to the mashed chickpeas. Mix until well combined.

  3. Divide the chickpea filling evenly onto 4 slices of bread. Top with lettuce and tomato slices.

  4. Place another slice of bread on top to form a sandwich. Cut in half if desired and serve.
