Ingredients

  • 4 goat’s cheese rounds
  • 4 eggs
  • 200ml double cream
  • Salt and pepper
  • 1 apple, thinly sliced
  • 50g walnuts, toasted
  • Mixed salad leaves
  • Olive oil for drizzling
  • Balsamic glaze for drizzling

Instructions

  1. Preheat the oven to 180 degrees Celsius.

  2. Cut a small slice off the top of each goat’s cheese round and scoop out a little of the cheese to make a hollow.

  3. In a bowl, whisk the eggs and double cream together. Season with salt and pepper.

  4. Place the goat’s cheese rounds on a baking tray and fill each hollow with the egg and cream mixture.

  5. Bake in the preheated oven for 25-30 minutes, until the soufflés are set and golden.

  6. Meanwhile, prepare the salad by tossing the apple slices, toasted walnuts, and mixed salad leaves together.

  7. Drizzle with olive oil and balsamic glaze.

  8. Serve the twice-baked goat’s cheese soufflés with the apple & walnut salad on the side.
