How To Make Thandai

Ingredients

  • 2 cups milk
  • 1/4 cup almonds, blanched and peeled
  • 2 tbsp cashews
  • 2 tbsp pistachios
  • 1 tbsp melon seeds
  • 1 tbsp poppy seeds
  • 1/4 cup sugar
  • 1/2 tsp cardamom powder
  • 1/4 tsp saffron strands
  • 1/4 tsp rose water
  • Ice cubes, for serving

Instructions

  1. Soak almonds, cashews, pistachios, melon seeds, and poppy seeds in hot water for 15 minutes. Drain.

  2. In a blender, add the soaked nuts and seeds along with sugar, cardamom powder, saffron strands, and rose water. Blend until smooth.

  3. Pour milk into a separate bowl and add the blended mixture. Mix well.

  4. Strain the Thandai mixture through a fine sieve to remove any coarse bits.

  5. Chill the Thandai in the refrigerator for at least 2 hours.

  6. Serve Thandai over ice cubes in glasses. Garnish with a sprinkle of rose petals or crushed almonds, if desired.
