How To Make Thandai
Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients
- 2 cups milk
- 1/4 cup almonds, blanched and peeled
- 2 tbsp cashews
- 2 tbsp pistachios
- 1 tbsp melon seeds
- 1 tbsp poppy seeds
- 1/4 cup sugar
- 1/2 tsp cardamom powder
- 1/4 tsp saffron strands
- 1/4 tsp rose water
- Ice cubes, for serving
Instructions

Soak almonds, cashews, pistachios, melon seeds, and poppy seeds in hot water for 15 minutes. Drain.

In a blender, add the soaked nuts and seeds along with sugar, cardamom powder, saffron strands, and rose water. Blend until smooth.

Pour milk into a separate bowl and add the blended mixture. Mix well.

Strain the Thandai mixture through a fine sieve to remove any coarse bits.

Chill the Thandai in the refrigerator for at least 2 hours.

Serve Thandai over ice cubes in glasses. Garnish with a sprinkle of rose petals or crushed almonds, if desired.
