Ingredients

  • 1 block of tofu, diced
  • 2 tablespoons of Thai red curry paste
  • 1 can of coconut milk
  • 1 tablespoon of soy sauce
  • 1 tablespoon of brown sugar
  • 1 bell pepper, sliced
  • 1 small onion, sliced
  • 1 tablespoon of vegetable oil
  • Fresh cilantro, for garnish

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.

  2. Add onions and bell peppers, sauté until they soften.

  3. Add tofu to the skillet and cook until lightly browned.

  4. In a separate bowl, mix together the curry paste, coconut milk, soy sauce, and brown sugar.

  5. Pour the curry mixture into the skillet with tofu and vegetables.

  6. Simmer for 10-15 minutes, or until flavors are well combined.

  7. Serve over steamed rice and garnish with fresh cilantro.
