How To Make Stilton & Poppy Seed Sablés

Ingredients

  • 100g Stilton cheese, crumbled
  • 200g all-purpose flour
  • 150g unsalted butter, cold and cubed
  • 2 tbsp poppy seeds
  • 1/4 tsp salt
  • 1 egg yolk
  • 1 tbsp water

Instructions

  1. In a food processor, combine Stilton cheese, flour, butter, poppy seeds, and salt. Pulse until the mixture resembles breadcrumbs.

  2. Add the egg yolk and water to the mixture. Pulse until the dough comes together.

  3. Transfer the dough onto a lightly floured surface and shape it into a log. Wrap in plastic wrap and refrigerate for 30 minutes.

  4. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

  5. Slice the chilled dough into rounds, about 1/2 inch thick. Place them on the prepared baking sheet.

  6. Bake for 15 minutes or until the edges turn golden brown.

  7. Allow the sablés to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

  8. Serve and enjoy!
