Ingredients

  • 6 large eggs
  • 1 medium butternut squash, peeled, seeded, and cut into small cubes
  • 1 tbsp olive oil
  • 1 tbsp chopped fresh sage leaves
  • 1 cup shredded gruyère cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large skillet, heat the olive oil over medium heat. Add the butternut squash and cook until tender, about 10 minutes.

  3. In a bowl, whisk the eggs until well beaten. Stir in the cooked butternut squash, sage, and gruyère cheese. Season with salt and pepper.

  4. Pour the egg mixture into a greased 9-inch pie dish or oven-safe skillet.

  5. Bake in the preheated oven for 20 minutes, or until the frittata is set and golden brown on top.

  6. Remove from the oven and let it cool for a few minutes before slicing.

  7. Serve warm and enjoy!
