How To Make Spicy Couscous Salad

Ingredients
- 1 cup couscous
- 1 ½ cups boiling water
- 1 tsp olive oil
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1 small red onion, finely chopped
- 1 jalapeno pepper, deseeded and minced
- 1 cup cherry tomatoes, halved
- ¼ cup fresh cilantro, chopped
- ¼ cup fresh mint, chopped
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions

In a large bowl, combine the couscous, boiling water, and olive oil. Cover and let it sit for 5 minutes.

Fluff the couscous with a fork and let it cool to room temperature.

Once the couscous is cooled, add the red bell pepper, cucumber, red onion, jalapeno pepper, cherry tomatoes, cilantro, and mint. Mix well.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the couscous mixture and toss to combine.

Serve the spicy couscous salad chilled or at room temperature.
