Serves:

Ingredients

  • 4 slices of crusty bread
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 can (400g) of diced tomatoes
  • 2 cups of vegetable broth
  • 1 teaspoon of dried basil
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Toast the bread slices until golden and set aside.

  2. In a large pot, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

  3. Add the diced tomatoes, vegetable broth, dried basil, salt, and pepper. Bring to a boil, then reduce heat to low and let simmer for 10 minutes.

  4. Use an immersion blender to blend the soup until smooth, or transfer to a blender and blend in batches until smooth.

  5. Serve the soup hot, with a slice of toasted bread on top. Garnish with fresh basil leaves.
