Ingredients

  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 bell pepper, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup black olives
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the salad greens, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and feta cheese.

  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the vinaigrette dressing.

  3. Pour the dressing over the salad and toss gently to coat.

  4. Serve immediately and enjoy!
