Ingredients

  • 8 oz orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh basil, chopped
  • 8 oz fresh mozzarella, diced
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • salt and pepper, to taste

Instructions

  1. Cook the orzo pasta according to package instructions. Drain and rinse under cold water.

  2. In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, black olives, red onion, basil, and fresh mozzarella.

  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.

  4. Pour the dressing over the salad and toss to combine.

  5. Serve chilled and enjoy!
