Ingredients

  • 4 cups lettuce, torn
  • 2 cups chicory, chopped
  • 1 apple, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup toasted walnuts
  • 1/4 cup dried cranberries
  • 2 tbsp poppy seeds
  • For the dressing:
  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the lettuce, chicory, apple slices, red onion, walnuts, and dried cranberries.

  2. In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, poppy seeds, salt, and pepper.

  3. Drizzle the dressing over the salad and toss to coat evenly.

  4. Serve immediately and enjoy!
