Ingredients

  • 4 cups mixed salad greens
  • 1 cucumber, sliced
  • 1 bell pepper, thinly sliced
  • 1 carrot, grated
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 2 tablespoons chia seeds
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the salad greens, cucumber, bell pepper, carrot, cherry tomatoes, red onion, parsley, sunflower seeds, pumpkin seeds, and chia seeds.

  2. In a small bowl, whisk together the olive oil, lemon juice, apple cider vinegar, honey, salt, and pepper.

  3. Pour the dressing over the salad and toss to coat evenly.

  4. Serve immediately and enjoy!
