How To Make Courgette & Basil Pasta with Pesto Crumbs

Ingredients
- 300g courgette, spiralized
- 350g pasta
- 2 tbsp olive oil
- 2 cloves of garlic, minced
- 1/2 cup fresh basil leaves, chopped
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
- 1/2 cup breadcrumbs
- 2 tbsp pesto
Instructions

Cook the pasta according to package instructions. Drain and set aside.

In a large pan, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant.

Add the spiralized courgette to the pan and sauté for 3-4 minutes until slightly tender.

Add the cooked pasta to the pan and toss to combine with the courgette.

Stir in the chopped basil and grated Parmesan cheese. Season with salt and pepper to taste.

In a separate pan, toast the breadcrumbs over medium heat until golden brown. Remove from heat and stir in the pesto.

Serve the pasta topped with the pesto crumbs.
