How To Make Citrus Soba Noodles

Ingredients

  • 8 oz soba noodles
  • 1 cup orange juice
  • 1/4 cup lemon juice
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 1 tbsp grated ginger
  • 1 garlic clove, minced
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 2 green onions, sliced
  • 1/4 cup chopped cilantro
  • Sesame seeds, for garnish

Instructions

  1. Cook soba noodles according to package instructions. Drain and rinse with cold water.

  2. In a small bowl, whisk together orange juice, lemon juice, soy sauce, honey, sesame oil, grated ginger, and minced garlic.

  3. In a large bowl, combine cooked soba noodles, bell pepper, carrot, green onions, and cilantro.

  4. Pour the citrus dressing over the noodle mixture and toss until well coated.

  5. Serve the citrus soba noodles garnished with sesame seeds.
