How To Make Brussels Sprouts Grain Bowl

Ingredients
- 1 lb Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper, to taste
- 1 cup cooked quinoa
- 1 cup cooked farro
- 1 cup cooked brown rice
- 1 avocado, sliced
- 1/4 cup chopped fresh parsley
- 1/4 cup crumbled feta cheese
- 1/4 cup roasted sunflower seeds
- dressing:
- 3 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tbsp honey
- Salt and pepper, to taste
Instructions

Preheat the oven to 425°F (220°C).

In a large bowl, toss the Brussels sprouts with olive oil, garlic powder, smoked paprika, salt, and pepper.

Spread the Brussels sprouts on a baking sheet and roast for 20-25 minutes, or until crispy and browned.

In a separate large bowl, combine the cooked quinoa, farro, and brown rice.

In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper to make the dressing.

Pour the dressing over the grain mixture and toss to coat.

Divide the grain mixture among 4 bowls and top with the roasted Brussels sprouts, sliced avocado, chopped parsley, crumbled feta cheese, and roasted sunflower seeds.
