Serves:
Ingredients
- 1 head of cabbage
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 cup cooked rice
- 1/4 cup chopped parsley
- 1/4 cup grated Parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1 can (14.5 oz) diced tomatoes
- 1 cup beef broth
- 1 tbsp tomato paste
Instructions
-
Preheat the oven to 350°F.
-
Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place it in the boiling water. Cook for 5-7 minutes, or until the leaves begin to soften. Remove the cabbage from the water and let it cool slightly. Remove 8 large leaves and set aside.
-
In a large bowl, combine the ground beef, diced onion, minced garlic, cooked rice, chopped parsley, grated Parmesan cheese, salt, and black pepper. Mix well.
-
Take one cabbage leaf and place about 1/4 cup of the beef mixture in the center. Roll the leaf, tucking in the sides as you go, to form a tight roll. Repeat with the remaining cabbage leaves and beef mixture.
-
In a large oven-safe skillet or Dutch oven, combine the diced tomatoes, beef broth, and tomato paste. Stir well. Place the stuffed cabbage rolls seam side down in the skillet.
-
Cover the skillet and transfer it to the preheated oven. Bake for 1 hour.
-
Remove the cover and baste the cabbage rolls with the sauce. Bake for an additional 30 minutes, uncovered.
-
Serve the braised stuffed cabbage rolls with the sauce spooned over the top.
