Ingredients

  • 2 cans of black beans, rinsed and drained
  • 8 large eggs
  • 1 tsp of salt
  • 1 tsp of cumin
  • 1 tsp of paprika
  • 1/2 tsp of chili powder
  • 1/2 tsp of garlic powder
  • 1/4 tsp of black pepper
  • 1 avocado, sliced
  • 1/2 cup of cherry tomatoes, halved
  • 1/4 cup of chopped cilantro
  • hot sauce, for serving

Instructions

  1. In a large skillet, heat 1 tbsp of oil over medium heat. Add the black beans, salt, cumin, paprika, chili powder, garlic powder, and black pepper. Cook for 5-7 minutes, until heated through.

  2. In another skillet, heat 1 tbsp of oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.

  3. Divide the black beans between 4 bowls. Top each bowl with 2 eggs, sliced avocado, cherry tomatoes, and chopped cilantro.

  4. Serve with hot sauce on the side.
