Serves:

Ingredients

  • 2 cups cooked lentils
  • 2 medium beetroots, grated
  • 1 cup fresh parsley, chopped
  • 1/2 cup fresh mint, chopped
  • 1/4 cup red onion, finely diced
  • 1/4 cup lemon juice
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked lentils, grated beetroots, parsley, mint, and red onion.

  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  3. Pour the dressing over the lentil mixture and toss well to combine.

  4. Serve chilled and enjoy!
