How To Make Baked Goat’s Cheese with Beetroot, Honey & Thyme

Ingredients
- 4 slices of goat’s cheese
- 4 medium-sized beetroots, peeled and sliced
- 4 tablespoons of honey
- Fresh thyme leaves
- Salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

Place the beetroot slices on the prepared baking sheet and drizzle with olive oil. Season with salt and pepper.

Roast the beetroot in the preheated oven for 25-30 minutes or until tender.

While the beetroot is roasting, place the goat’s cheese slices on another baking sheet lined with parchment paper.

Drizzle each slice of goat’s cheese with honey and sprinkle with fresh thyme leaves.

Transfer the baking sheet with the goat’s cheese to the oven and bake for 5-8 minutes or until the cheese is soft and slightly golden.

Remove both the roasted beetroot and baked goat’s cheese from the oven.

Serve the baked goat’s cheese on top of the roasted beetroot slices.

Garnish with additional fresh thyme leaves and drizzle with more honey if desired.
