
How To Make Asparagus with peas, mint & Jersey Royals in wild garlic butter

Ingredients
- 1 bunch of asparagus, trimmed
- 1 cup of fresh peas
- 1 lb Jersey Royals (baby potatoes), halved
- 4 tbsp unsalted butter
- 2 cloves of wild garlic, minced
- 1 tbsp fresh mint leaves, chopped
- Salt and pepper to taste
Instructions

Bring a pot of salted water to a boil. Add the asparagus and cook for 2-3 minutes until slightly tender. Remove with a slotted spoon and set aside.

In the same pot, add the peas and cook for 1-2 minutes until bright green. Remove with a slotted spoon and set aside.

Add the Jersey Royals to the pot and cook for 10-12 minutes until tender. Drain and set aside.

In a large skillet, melt the butter over medium heat. Add the minced wild garlic and cook for 1-2 minutes until fragrant.

Add the cooked asparagus, peas, and Jersey Royals to the skillet. Toss to coat everything in the wild garlic butter.

Sprinkle with chopped mint leaves and season with salt and pepper to taste. Cook for an additional 2-3 minutes until heated through.
