How To Make Asparagus & New Potato Frittata

Ingredients
- 8 asparagus spears, trimmed and cut into 1-inch pieces
- 10 small new potatoes, sliced
- 1 tablespoon olive oil
- 1/2 onion, diced
- 6 eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
Instructions

Preheat the oven to 375°F (190°C).

In a large oven-safe skillet, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes.

Add the asparagus and potatoes to the skillet and cook for another 5 minutes, until the vegetables are slightly tender.

In a medium bowl, whisk together the eggs, milk, salt, and pepper. Pour the mixture over the vegetables in the skillet.

Sprinkle the shredded cheddar cheese over the top of the frittata.

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set and the cheese is melted and golden brown.

Remove from the oven and let cool for a few minutes before slicing and serving.
