How To Make Rhubarb Custard Crunch

Ingredients
- 500g rhubarb, chopped
- 100g sugar
- 1 tsp cornstarch
- 200g custard, prepared
- 100g flour
- 50g rolled oats
- 50g butter, cold and diced
- 50g brown sugar
Instructions

Preheat the oven to 180°C (350°F).

In a saucepan, combine the rhubarb, sugar, and cornstarch. Cook over medium heat until the rhubarb is soft and the mixture has thickened.

Spread the cooked rhubarb in the bottom of a baking dish. Pour the custard over the rhubarb.

In a separate bowl, combine the flour, oats, butter, and brown sugar. Rub the mixture together with your fingers until it resembles coarse crumbs.

Sprinkle the crumble mixture evenly over the custard.

Bake in the preheated oven for 45 minutes, or until the top is golden brown and the rhubarb is bubbling.

Serve warm with a scoop of vanilla ice cream, if desired.
