How To Make Vegetarian Lobster Rolls

These lobster rolls are anything but seafood; as it’s a vegetarian-friendly snack loaded with hearts of palm tossed in a creamy dressing over potato rolls.

  • 28ozhearts of palm,(2 jars), drained
  • 1large celery stalk,(or 2 small stalks)
  • 2tbspfresh dill,chopped
  • 2tbspfresh chives,plus more for garnish
  • 1tspold bay seasoning
  • salt,to taste
  • pepper,to taste
  • lemons,juiced
  • cupmayonnaise
  • 4long potato rolls
  • 2tbspbutter,melted


  1. Cut the hearts of palm into oblique chunks and add them to a large bowl. Mince the celery and add to the bowl with the hearts of palm.

  2. Add the dill, chives, Old Bay seasoning, salt, pepper, lemon juice, and mayonnaise and stir to combine.

  3. Brush the insides of the potato buns with the melted butter.

  4. Toast in a medium skillet over low heat for 2 to 3 minutes, until golden.

  5. Fill the buns with the hearts of palm mixture, then garnish with chives.

  6. Serve and enjoy!
