How To Make Chunky Chicken Sandwich

This fully loaded chicken sandwich is packed with juicy chicken, grapes, and crunchy pecans, and is all lusciously coated in a creamy and tangy dressing!

Ingredients

  • 2cupschicken,cubed, cooked
  • 1cupgrapes,seedless
  • ½cuppecans
  • ½cupcelery,diced
  • ½cupmayonnaise,low fat
  • ¼cupdijon mustard
  • 1tspdried tarragon
  • ½tspsalt
  • ¼tsppepper
  • 6croissants
  • lettuce,or spring salad mix

Instructions

  1. Put the chicken, grapes, pecans, and celery in the large mixing bowl.

  2. In the small bowl, stir the mayo, mustard, tarragon, salt, and pepper together until well combined.

  3. Add the dressing to the large bowl and toss to coat all of the salad pieces.

To Assemble:

  1. For each sandwich, put a couple leaves of lettuce on the bottom half of a croissant, spoon about 1 cup of chicken salad on that, and top with the other half of the croissant.

  2. Serve with lemonade, and enjoy!
