  • 8 slices of rye bread
  • 1 pound of sliced corned beef
  • 8 slices of Swiss cheese
  • 1 cup of sauerkraut
  • 1/2 cup of Thousand Island dressing
  • Butter, for grilling

Instructions

  1. Preheat a griddle or large skillet over medium heat.

  2. Spread butter on one side of each slice of bread.

  3. On the unbuttered side of 4 slices of bread, evenly distribute the corned beef.

  4. Top the corned beef with Swiss cheese slices and sauerkraut.

  5. On the remaining 4 slices of bread, spread Thousand Island dressing.

  6. Carefully sandwich the bread slices together, buttered side out.

  7. Place the sandwiches on the preheated griddle or skillet and cook for about 5 minutes on each side, or until the bread is golden brown and the cheese is melted.

  8. Remove from heat and slice each sandwich in half.

  9. Serve hot and enjoy!
